I knew they were the only fruit with the seeds on the outside, but didn't realize that the average number of seeds per berry is 200. I learned these fun facts from the lovely card the Harry & David store inserted in our latest fruit of the month delivery (a very thoughtful gift!) According to this card, strawberries "…have been valued throughout history as symbols of purity, longevity, perfection and love."

While reading the Harry & David insert card and enjoying the delicious berries they sent us, I decided to share my gift with you. I'm guessing that I've made your mouth water with the thought of eating yummy strawberries, and so here is one of my favorite recipes. Fresh strawberry pie is a favorite I first learned to love while living in the Pacific Northwest. According to the aforementioned card, strawberries are grown in every state in the U.S., and so wherever this blog finds you—happy baking!

Strawberry Pie
 
Pie crust (your favorite recipe)
 
1 ½ quarts strawberries
 
1 cup white sugar
 
3 tablespoons cornstarch
 
½ cup water
 
1 dash vanilla

Prepare favorite pie crust recipe. Roll into pie plate, poke holes in bottom and bake until golden. Cool.

Wash, hull and halve strawberries. Pat dry with paper towel. Arrange fresh berries in pie shell until full.

In a small bowl, combine cornstarch and water and set aside.

Combine remaining berries, vanilla and sugar in a saucepan, mashing to form a paste. Bring mixture to a low boil, stirring frequently. Reduce heat to a simmer and stir in the cornstarch and water mixture. Simmer for approximately 5 minutes. Add more water as needed if mixture is too thick. 

Pour liquid mixture over the berry pie. Chill overnight or for several hours. Serve with whipped cream if desired.
